Last week some of you asked for a smoothie with fewer carbs and one that could be more “Keto diet” friendly. AND after LOTS of research I came up with a smoothie that covers keto and all my criteria- healthy, yummy, nutritional, and easy. Once you hear the ingredients you will probably not believe it is actually yummy because I hid a lot of green veggies in this one and used less fruit. And if you’re like me the thought of blended kale and celery almost turns your stomach. You will just have to take my word for it on this one, it’s truly yummy and SO nutritional.
For this smoothie I replaced almost all fruit for veggies and used just enough of each to not be overpowering in the “root-ie” taste. If you’re familiar with green smoothies that are heavily veggie based you know that “root-ie” taste I’m referring to. It’s not a favorite taste of mine. And sometimes when you get the balance of ingredients off it can taste this way- so I worked a little harder on this one to perfect the taste. And if you don’t know the “root-ie” taste I think I can best describe it as the way dirt smells?? If that even makes sense.
The only fruit I used in the smoothie is strawberries. Scratch that! I used avocado too, and it’s technically a fruit. Here’s the nutritional value behind these TWO fruits. Strawberries are packed with vitamin C, antioxidants, and provide a good source of fiber. Avocados contain healthy fats (monounsaturated fats) as well as many vitamins and minerals. They are a great source of fiber and aid in helping your body absorb nutrients. And I’ve heard they are great for KETO.
Now for the veggies that I used-cucumbers, celery, and kale. Do you think you could sit down and eat a plate full of these for breakfast?? If that doesn’t sound appetizing try them blended in a smoothie where you won’t even taste them. Your body will thank you! Cucumbers are high in nutrients and low in calories. They contain antioxidants and may aid in lower blood sugar. Celery is an amazing source of vitamin K. And kale is pretty much the holy grail of healthy food. Kale is amazing for your body.
So now that we’ve talked about all the main ingredients (y’all know my other basics) here is the recipe:
Recipe for Green Strawberry Veggie Smoothie-
Ingredients:
1 cup Unsweetened Almond Milk
2 scoops Protein Powder- I use Orgain (CLICK HERE) for Keto use Keto protein powder.
4 whole Fresh Strawberries
1/2 Ripe Avocado
1 small Celery Stalk
1/4 medium Cucumber
1 Heaping Handful of Kale
1 tsp Vanilla Extract
1/2 cup Ice
Instructions:
Add the almond milk then the protein powder. (Sometime I swirl the almond milk and protein powder around to mix).
Next add your Strawberries, Cucumber (with peel), avocado, and celery.
Next add your vanilla extract.
Last add your kale and top with ICE
Blend on hight for 90 sec or use your smoothie setting if you have a Blendtec. The smoothie should be smoothy and pourable. Enjoy!
